Cannabis-Infused Tropical Waffles
I was super stoked when I got my new Waffleye waffle maker in the mail. I’d been in the market for one as my old thrift shop unit died a few years back so it’s been a minute since I’ve had a homemade waffle! Though it takes a little extra preparation, I much prefer a thick, fluffy, yeasted waffle over a regular waffle. Overnight, the batter will rise and smell pleasantly fermented. The waffles should come out a little tangy, light and fluffy inside, with a crunchy exterior. The tropical mango pineapple drizzle on top is medicated with cannabis-infused honey and dusted with a touch of matcha. The perfect weekend wake-and-bake!
Cannabis-Infused Tropical Waffles
Makes about 8 waffles
Make-Ahead Yeasted Waffle Ingredients:
• 1/2 cup warm water (110ºF-115ºF)
• 1 package (1/4 oz) active dry yeast
• 2 tsp cane sugar
• 2 cups warm whole milk (110ºF-115ºF)
• 1 stick unsalted butter, melted, and extra for waffle iron
• 2 Tbsp honey
• 1 tsp vanilla extract
• 1 tsp kosher salt
• 2 cups all-purpose flour
• 1/4 tsp baking soda
• 2 large eggs
Topping Ingredients:
• 1 mango, I used Ataúlfo
• 1/4 cup pineapple chunks
• 1 Tbsp Sous Weed honey or Potli Honey
• 1 Tbsp matcha, I used Laka
• 1 Tbsp powdered sugar
Directions for the Night Before:
1. Add warm water, yeast, and sugar in a large mixing bowl. Let it stand for approximately 5 minutes until the yeast dissolves and begins to foam.
2. Using a spatula, stir in lukewarm milk, melted butter, honey, vanilla extract, and salt until uniform.
3. Add in flour and fold until the batter is completely smooth. Cover the bowl with plastic and leave it on the countertop to rest overnight in room temperature.
Directions for Medicated Mango-Pineapple Drizzle:
1. Add pitted mango, pineapple chunks, and cannabis-infused honey in a blender and puree until smooth.
2. Pour into a squeeze bottle and keep in refrigerator until ready to use.
Directions for the Morning Of:
1. In a small mixing bowl, beat eggs together with baking soda. Add the egg mixture into the batter and whisk to combine. The batter should have expanded and will smell deliciously yeasty.
2. Heat waffle iron according to the manufacturer’s instructions and lightly brush the top and bottom with butter.
3. Once the waffle iron is hot, pour batter (approximately 1/2 - 3/4 cup) making sure to coat the surface completely. Close the lid and cook for about 6-7 minutes, until golden brown.
4. Make sweet match dust by combining matcha and powdered sugar together and put in a fine mesh strainer. Set aside.
5. To serve: Drizzle medicated mango-pineapple sauce over warm pancakes and lightly dust with the sweet matcha. Serve immediately.
