Our basil plant has been out of control! I made a killer sous vide strawberry basil syrup that I've been using in cocktails but it's also great in my nutritious hemp smoothies! I'm tag-teaming this one by using both hemp oil and the seeds. Mix in some adorable little pea shoots and you've got a sweet start to the day.
Strawberry Sweet Pea Smoothie
Serves 2
Ingredients for Sous Vide Strawberry Basil Syrup
• 1 lb strawberries, stemmed and halved
• 1 cup fresh basil, packed
• 1/2 lemon, juiced
• 1 cup honey
Ingredients for Smoothie
• 1/4 cup strawberry basil syrup
• Handful of sweet pea shoots
• 1/2 cup almond milk
• 1/2 cup greek yogurt
• Handful of ice cubes
• 1 tsp of cold-pressed hemp oil
• Pinch of hemp seeds - optional
Directions for Sous Vide Strawberry Basil Syrup
1. Set sous vide water bath to 57ºC (134.6ºF).
2. In a gallon-sized zip bag, seal all ingredients using the water displacement method.
3. Submerge and sous vide for one hour.
4. Remove from water bath and discard basil.
5. Pour strawberries and syrup into a jar and refrigerate. Use in cocktails, smoothies, or in desserts!
Directions for Smoothie:
1. Blend strawberry basil syrup, pea shoots, almond milk, yogurt, hemp oil, and ice cubes in a blender until smooth.
2. Serve with a pinch of hemp seeds and some sweet pea shoots.
